Val’s Biscuit Shepherd’s Pie
Ingredients:
Oil Spray
9in x 13in deep dish baking dish
3 - 7.5 oz pouches of Bisquick buttermilk biscuit mix
1 medium onion, diced (about 1 1/4 cups)
4 tablespoons of olive or vegetable oil
12 oz of ground beef
12 oz of sausage of your choice, chopped to your liking
1/2 cup vegetable broth
2 - 10 oz pouches of mixed vegetables, such as diced carrots, corn, green beans and peas
4 tablespoons (1/2 stick) butter
2 tablespoons of flour
8 oz of shredded Swiss & gruyere cheese blend or 8 oz of shredded parmesan cheese
1 cup of milk
1/4 teaspoon of nutmeg
Pepper, Salt and/or other seasonings of choice
Directions:
Follow directions on Bisquick pouch and mix ingredients as directed, and set to the side.
Preheat the oven to 450°F.
Heat 4 tablespoons of oil in a large sauté pan on medium heat.
Add diced onions and cook until tender and buttery brown (5 to 10 minutes)
Add mix vegetables, keep cooking for another 10 minutes
Brown ground beef and chopped sausages in separate pans
Add 1/2 cup of vegetable broth to onion/vegetable pan, keep cooking
Add browned ground beef and sausage
Season with salt and pepper.
Taste the delicious mixture and, if needed, add more salt, pepper, or other seasonings of your choice.
Spray baking dish with oil spray
Spread the meat/onion/vegetable mixture in an even layer in large baking dish
Now, let’s make the béchamel sauce: Melt butter in a large saucepan over medium heat. Once melted, stir in the flour until smooth. Continue stirring as the flour cooks to a light, golden, sandy color. Stir in milk until nice and smooth. Add cheese, 1/4 teaspoon of nutmeg and other spice to taste such as salt and pepper. Simmer for 5 minutes while whisking. Sauce should reach a nice thick consistency similar gravy or Alfredo sauce.
Pour béchamel sauce over meat/onion/vegetable mixture
Drop Bisquick biscuit dough mix by rounded tablespoonfuls over meat/onion/vegetable mixture and béchamel sauce
Place in a 450°F oven and cook until browned and bubbling, about 20 to 25 minutes. If necessary, broil for the last few minutes to help the surface biscuit layer get brown to your liking.
