Val's "Best Of My Love" Sweet Potato Soup Recipe
A comforting soup which can be eaten by itself or could be the base to additions such as smoked turkey or bacon, wild rice and so much more!
Ingredients
5 large sweet potatoes
2 cups of vegetable broth
1 (13.5 oz) can of coconut milk
1/2 of a red onion diced
2 garlic cloves smashed and diced
4 tablespoons of unsalted regular butter or vegan butter
1 teaspoon paprika
1 teaspoon of black pepper
1 teaspoon of curry powder
1 teaspoon of salt
1/2 teaspoon of sage (optional but highly recommended!)
Directions
Baked 5 large sweet potatoes at 450 degrees for one hour
Peel Potatoes while hot (be careful!)
Mash sweet potatoes in a large bowl while adding two cups of vegetable broth and 1 can of coconut milk
In a large pan, sauté the diced onion and garlic in 4 tablespoons or regular unsalted or vegan butter until caramelized over medium heat and then reduce to low heat
Puree sweet potato, broth and coconut mixture in a food processor until smooth
Pour sweet potato mixture over cooked onion and garlic
Add 1 teaspoon of paprika
Add 1 teaspoon of black pepper
Add 1 teaspoon of curry powder
Add 1 teaspoon of salt
Add 1/2 teaspoon of sage
Simmer to desired thickness and serve!
